Mango Chia Seed Pudding
1/4 cup chia seeds
1 cup almond milk
1/4 tsp cinnamon
1/2 tsp vanilla
1/3 cup frozen mango
1 tbsp coconut milk
1 tsp coconut flakes to top
1 tsp goji berries to top
1. combine chia seeds, almond milk cinnamon and vanilla in a bowl or container and let sit for 4 hours until a gel like consistency is reached.
2. in a blender puree mango and coconut milk until smooth.
3. To serve pour mango mixture into bottom of serving glass and spoon chia pudding over the top. top with coconut flakes and goji berries.
