Zucchini Pasta with Roasted Red Pepper Sauce

1 lb zuccchini
5 oz roasted bell peppers
2 tbsp olive oil
1 oz goat cheese
1/2 tsp salt
2 cloves garlic minced
1/2 cup onion diced
1 tsp pepper
1 tbsp fresh basil
1 tbsp parmesan

1. Using a spiralizer or patiently cut with a knife the zucchini into thin 'noodles'.
2. Combine the peppers, olive oil, goat cheese and salt in a blender and puree.
3. In a pan over medium heat add olive oil, garlic and onion and sauté for 2 minutes.
4. Add the zucchini and cook for 4 minutes or until the water starts being released from the zucchini.
5. Add the roasted pepper sauce and cook for a few minutes until the sauce has thickened to desired consistency.
6. Top with parmesan, basil and pepper.
