Skinny Zucchini Bread

1 1/2 cup whole wheat flour
1 1/2 cup sweetener
1/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1/2 cup walnut chopped
1 egg
2 egg white
2 1/2 cup zucchini finely grated
1/4 cup extra virgin olive oil
2 tsp vanilla extract

1. Preheat oven to 350 degrees.
2. Spray two 8 x 4 inch loaf pans with non-stick cooking spray. Beat eggs, oil, vanilla, and sweetener together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well.
3. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
4. Pour mixture into muffin pan and cook for 40-45 minutes until knife comes out clean.
