Healthy Pumpkin Waffles

Ingredients

3 eggs
1/2 cup pumpkin purèe
2/3 cup almond milk
3 tbsp maple syrup
1/3 cup coconut oil
1 tbsp vanilla
2 1/4 cup oat flour (old fashioned oats processed in a food processor or blender)
1 tbsp baking powder
1 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice

Directions

1. Combine eggs, pumpkin puree, almond milk, maple syrup, coconut oil and vanilla in a bowl and whisk until blended.
2. In a separate bowl combine the oat flour, baking powder, salt, cinnamon, nutmeg and allspice and mix. Stir in the pumpkin mixture into the dry ingredients and mix until blended. Allow the mixture to sit for 15 minutes until the mixture has thickened up.
3. Spoon mixture into the pre-heated waffle iron in batches on high heat and cook until golden brown.

NOTE

Don't stack the waffles on top of each other while finishing up cooking, as they will lose their crispness.
