Fig Chia Pudding
1/4 cup chia seeds
1 cup almond milk
1 tsp vanilla
1 tbsp maple syrup
1/2 tsp cinnamon
1/2 cup greek yogurt
1/4 cup coconut milk
1 medjool date
6 blackberries frozen
1/4 cup pomegranate

1. Combine the chia seeds, almond milk, maple syrup, cinnamon and vanilla to a bowl and stir and let sit for at least 20 minutes until the chia seeds have soaked up the almond milk become thick.
2. In a blender combine the yogurt, coconut milk, date and blackberries and blend until smooth.
3. Spoon the pomegranate equally between 2 small jars. Optional: round the jar with thin fig slices then spoon the chia pudding on top of the pomegranates.
. Top with the blended fig smoothie. Optional: top with fig slices, hazelnut and a blackberry. Enjoy!
