Berry Chia Seed Pudding
1/4 cup chia seeds
1 cup almond milk
1/4 tsp cinnamon
1/2 tsp vanilla
1/2 cup frozen raspberries
1 tbsp coconut milk
1 tsp honey
1 strawberry sliced thin
2 tsp coconut flakes

1. combine almond milk, chia seeds, cinnamon and vanilla in a bowl or container and stir and let sit for 4 hours.
2. Blend the raspberries, coconut milk and honey until smooth.
3. Spoon chia seeds into serving glass until 1/3 full. 'Stick' the strawberry slices to the side of the glass in a round just above the chia seeds. Add the remaining chia seeds to the glass and top with the berry mixture then coconut flakes. Enjoy!
