Beet and Goat Cheese Mason Jar Salad

Ingredients

1 tbsp olive oil
1 tbsp balsamic vinegar
1/2 tsp salt
1 tsp dijon mustard
1/2 tsp pepper
3/4 cup roasted beets (cooked and cooled or store bought)
3/4 cup arugula washed
2 tbsp walnuts
1 1/2 tbsp goat cheese crumbled
1 mandarin peeled and sliced

Directions

1. Combine olive oil, balsamic vinegar, salt, dijon mustard and pepper in the jar and stir until all are incorporated.
2. Place the remaining ingredients in the jar making sure the beets are at the bottom so the other ingredients don't become soggy. Enjoy!
