Avocado BLT Sandwich
2 tbsp light mayonnaise
1 tbsp green onion finely chopped
1 tsp water
1/8 tsp salt
1/8 tsp black pepper coarsely ground
4 slice reduced calorie wheat bread toasted
4 slice reduced fat turkey bacon cooked
4 slice fresh tomato
1 cup baby arugula (or lettuce)
1/2 avocado cut into 8 slices

1. In a small bowl, mix together mayonnaise, green onion, water, salt, and black pepper. Spread each slice of toast with the mayonnaise mixture.
2. On 2 pieces, layer half of the bacon, tomato, arugula or lettuce, and avocado. Top with remaining toast.
